Homemade Cinnamon Walnut Muffins

The combination of rich walnuts and aromatic cinnamon not only delights the taste buds but also brings back warm memories.

Ingredients
  

  • 2 Cups All-Purpose Flour
  • 150 Grams Granulated Sugar
  • 2 Tsp. Baking Powder
  • 2 Eggs
  • 115 Grams Unsalted Butter
  • 2 Tsp. Vanilla Essence
  • 1 Tbsp. Cinnamon Powder
  • 60 Grams Walnuts (Chopped)
  • 1 Tbsp. Brown Sugar and Cinnamon Powder (For Topping)
  • 170 Grams Milk
  • ½ Tsp. Salt

Instructions
 

  • Preheat your oven to 350°F (180°C). Line muffin tray with muffins liners or grease it with butter or oil.
  • Mix all the dry ingredients in a large bowl. Add all-purpose flour, cinnamon powder, baking powder, and salt in a bowl. Mix these ingredients thoroughly to ensure that the baking powder and spices are evenly distributed throughout the mixture.
  • Whisk together the wet ingredients with granulated sugar in a separate bowl. Add granulated sugar, melted butter, vanilla essence, milk and eggs in a bowl. Whisk them all together until well combined. Remember to not overmix the wet ingredients because overmixing can make denser muffins.
  • When all the wet ingredients are mixed together, gradually add the dry ingredients, folding everything together gently until just combined. The key is to keep the batter slightly lumpy to make fluffier muffins.
  • Add chopped walnuts in this batter, mix and make sure walnuts are evenly distributed throughout the batter.
  • In a small bowl add brown sugar and cinnamon powder that we will use for topping.
  • Finally, by using a cookie scoop or a spoon, divide the batter evenly among the prepared muffin tray, filling each about two-thirds full.
  • Sprinkle the prepared brown sugar and cinnamon powder mixture over the top of batter.
  • Place the muffin tin in the preheated oven and bake for approximately 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
