- 1 Tbs. Olive Oil
- 1 diced, medium Onion
- 1 diced, medium bell pepper
- ½ tsp. Garlic paste
- 1 packet of taco seasoning
- Salt and black pepper to taste
- 6-8 tortillas 7 to 8 inches
- Shredded cheese 2 cups (Monterey Jack or Cheddar or blend of both)
- 2 Tbs. of tomato paste
- 2 Tbs. vegetable oil to cook quesadillas
- Salsa, sour cream or avocado for topping (Optional)

Step 1:
Heat olive oil in a large skillet, add ground beef and garlic. Then cook over medium-high heat until the beef is browned while breaking it up into small pieces.
Step 2:
Once the beef turned brown, add diced onion, bell pepper and cook until they are soft and tender.

Next add in tomato paste, taco seasoning, salt and pepper and cook for another 5 min or until the beef’s fully cooked and there is no water left. Keep aside to cool down.
