Mostly people complain that their egg fried rice has a mushy and sticky texture. To overcome this problem it is recommended to use Day-Old Cold Rice because freshly cooked rice has more moisture that actually results in mushy texture.

But it doesn’t mean that you cannot use rice cooked the same day, just make sure you cook them ahead of time and they are well cooled before you add to the Wok. In order to avoid getting mushy and clumpy rice, cook them in comparatively lesser amount of water than you would normally use.

Cook on High Heat:

When you add the rice to the wok, make sure to fry them on a high flame to help ensure every grain of rice is crisp and well-cooked that will add a perfect texture to the Egg Fried Rice.

  • Choosing the right type of Rice is very crucial while making perfect egg fried rice. Medium to long grain rice is the best choice for egg fried rice like jasmine or basmati rice. It will result in non-sticky, fluffy and full of flavor dish.
  • Also it is best to use day-old, cold rice for the best result but you can also use freshly cooked rice but make sure that they are cooked ahead and are well cooled in refrigerator for at least 1 to 2 hours.

Preparing the Rice:

  • Use day-old cold rice for perfect texture. If you don’t have leftover rice, you can cook it 1 to 2 hours ahead and cool it completely. Spread the rice on a tray and refrigerate so that moisture in freshly cooked rice dries out well.
  • Now, if there are any clumps in the rice, make sure to break them with the help of your hand or a fork. By doing so, the rice will not stick to the wok during stir-frying and will also help ensure even cooking.

Preparing the vegetables:

  • If you are using leftover vegetables, make sure to thaw them before stir frying. I am using fresh vegetables and for that wash, peel and finely chop all the vegetable and put them in separate bowls.

Scramble Eggs:

  • Beat eggs in a bowl. Add a tea spoon of oil in a large size pan or wok and heat over medium to high heat. Once hot, pour beaten eggs and stir slowly to make fluffy scrambled egg. Remove scrambled egg from the pan, set aside in a bowl and let it cool down.

Stir Frying:

  • In a same pan add a 2 table spoons of oil, heat on slow to medium heat and add chopped ginger garlic. Let them cook for less than a minute, or until the aroma is released.
  • Now start adding chopped vegetables on by one while stirring the vegetables thoroughly over medium to high heat for about 2 minutes or until they are partially cooked. Add salt, pepper and sauces while stir frying the vegetables. Do not overcook the vegetables so that they look vibrant in color and crispy in texture.
  • On a high flame, it is time to add cold rice in the pan while stirring continuously to help ensure the rice grains are evenly coated with oil and mixed into the vegetables. Add a little more seasonings and sauces at this point after tasting. Drizzle soya sauce over and mix thoroughly so the flavors distribute evenly.
  • Sprinkle freshly chopped chives or spring onion over the fried rice and toss them gently.

  • 3 Cups Cooked Rice (Day-Old, Cold Rice)
  • 2 to 3 Large Eggs
  • ½ Cup Carrot
  • ½ Cup Cabbage
  • ½ Cup Capsicum
  • 2 to 3 Tbsp. Soya Sauce
  • 1 Tbsp. Ginger, Garlic (Chopped)
